Enchilada Sauce

This is a recipe from Grandma Vawdrey. In the past I haven't really liked enchiladas, but enchiladas made with this sauce are super yummy. I can't get enough of them. And they're super easy.

1/4 c. oil
1 clove garlic pressed
5 Tbsp. flour
3 Tbsp. chili powder
1 1/4 tsp. cumin
1 1/2 tsp. salt
8 oz. tomato sauce
3 c. water

Saute garlic in oil. Then add flour and mix in. Slowly add water and stir until well mixed. Add chili powder, cumin, salt, and tomato sauce. Pour a little bit in bottom of pan. Fill pan with your tortillas filled with either chicken or ground beef. I usually do chicken that has been cooking in the crockpot all day with some salt, pepper, and onions. I also add a little cheese in with the chicken. Pour enchilada sauce over the top and cover with cheese. Cook at 350 until they're cooked through.

I'm wondering what night of the week Grandma Vawdrey traditionally mixes up some of her enchilada magic--because I'd like to be there to enjoy the fiesta.

Alicia, I made your enchilada sauce for dinner tonight. I usually buy mine in a can, but this was my favorite and easy too. Yum. Thanks to Grandma.
