Strombolis

I'm making an effort to keep track of food I make that my kids like and will eat readily. Any dinner I can put on the table that everyone will eat without complaint is definitely going to be made again. My goal is to post one here at least once a week for the next few months, more for my benefit than any of the rest of you ; ), and I'd love to see the same from some of you. I'm going to tag all of these posts with "kid friendly" for easier searchability as well.

I grew up on strombolis and have always loved them. My kids have always preferred pepperoni and mozzarella, but feel free to use your imagination. Turkey and swiss, ham and cheddar...whatever suits your fancy. I love that this can be completely made in under an hour with fresh homemade dough. I use this same dough for cinnamon and orange rolls because it's nearly instant gratification. A lot of times I'll make 10 or so strombolis with most of the dough, then use the remaining dough to make sweet rolls for dessert.

Here's the recipe:

1/3 cup sugar
2 T. yeast
½ cup oil
1 ¼ cup warm water
1 beaten egg
½ t. salt
4 cups flour (all white, or may use one cup of wheat flour)

Mix sugar, yeast, oil and warm water until dissolved. Let stand for 15 minutes. Add the beaten egg. Mix and add the salt and flour. Add enough flour for a soft dough. Knead 5 minutes. You may either use the dough immediately or allow it to rest for 10 or 15 minutes. Pinch off plum sized chunks of dough and roll out into a 6 inch diameter circle. Place 5 pepperonis and half a string cheese in the middle and roll up egg roll style by folding the sides in first. Pinch to seal and place seam side down on a greased baking sheet. Allow to rest for 10 minutes, then bake at 375 for 15 minutes or until golden. Serve with marinara sauce for dipping. This amount of dough will make approximately 18 strombolis.


The finished product. I like to serve finger foods on the side as well. Saves washing all those forks...

These were awesome and so kid friendly (making and eating) and fast. We made ours with ham and cheese, but I'm definately trying your pizza one next time. I love the half a cheesetick idea - no mess and they can't over/under do it.

I made these tonight and they were fantastic! I ran out of pepperoni halfway through, so the other half was ham and cheese. I used sliced american, the food product kind, and it leaked out during cooking. I suppose I should've used read cheddar, but they were still good. Thanks!

Kathy, glad you like these! They're a definite favorite around here. I grew up on them, though my mom used to skip the cheese. What good is a stromboli without cheese, I say!

We also like turkey and swiss. Feel free to get creative - just remember to pinch tightly closed to minimize leakage.
