Help me out here.

I'm formulating a menu for a bridal shower, and I'm looking for recipes for mini quiches. I have both the tiny muffin tins and regular sized ones. Give me your best, please.

Mini Quiches







+ Mix 2T flour, 8 oz. shredded cheese, and 1/2 cup chopped onion into a bowl (coating ingredients in flour helps them to combine in the egg mixture)
+ Beat 4 eggs slightly and add 1 1/2 cups of half and half
+ Add egg mixture to the cheese mixture
+ Sprinkle with salt and pepper
Cut small circles out of refrigerated pie crusts with 2 1/2 inch cookie cutter (or use a 1/2 cup measuring cup)
+ Spray muffin cups with cooking spray
Put one pie crust circle into each mini muffin cup and form shell around muffin cup with fingers
**Add a pinch of additional ingredients if desired (crumbled cooked bacon, broccoli, spinach, etc.)
Pour egg/cheese mixture into muffin cups

Bake at 350 degrees for approximately 25 minutes (or until toothpick comes out clean)
(makes 24 mini quiches)







You can also make this in a 9 inch pie plate, Can't remember the cooking time though probably 50-60 minutes. I have made this many times for parties.
