I admit it. I'm a recipe stealer. This delicious and super easy recipe comes from the family cookbook of a friend of mine (from her mom). She's going to be sorry that she gave it to me. Perhaps we should get her blogging on here and adding her own recipes.
1/2 c. melted butter
3/4 c. sugar
1 tsp. vanilla
2 beaten eggs
4-6 Tbsp. cocoa powder
1 c. flour
Mix sugar and butter; add vanilla and eggs. Then blend in cocoa and flour. Preheat waffle iron. When the iron is hot, place rounded teaspoons of dough on the iron. Close and cook for approximately one minute, or until cookies start to brown around edges and will hold together. Remove from hot waffle iron with the edge of a knife and place on a cookie rack to cool. Sprinkle cookies with a fine dusting of powdered sugar. The cooking time will vary depending on your waffle iron.
