Sopa de Fideos

This is a quick soup for dinner that goes well with grilled cheese sandwiches.

1  7 oz. package fideo pasta (I get the gamesa brand in the Mexican section)
8 cups chicken broth
1/4 cup vegetable oil (I use olive oil with a little butter)
1/2 cup vegetable puree
1 T. powdered chicken broth
1/2 tsp. salt (if necessary)

In the oil fry the pasta stirring constantly until lightly brown. Add all other ingredients and let boil about 5 min. or until pasta is done.

I sometimes use 1 quart of my canned tomatoes and cut the broth in half. Just put them in the blender.  I have also just broken up spaghetti noodles and used them.

What kind of vegetable purees have you used besides tomato? The first thing that popped into my head was that maybe this could be a way to use up leftover jars of carrot baby food.

I have never thought of it. But I think it would be good!

I just read my recipe and realized that it isn't vegetable puree I use. I should have typed tomato puree. I still think the vegies would be great. Sorry for the typo, but maybe something good has come from it.

Oh the possibilities : )!. I'll have to see what I come up with. I think my inclination to think experimentally with it comes from reading "Deceptively Delicious" by Jessica Seinfeld. She sneaks all sorts of different vegetables into her food. Worth a shot, I suppose.
