german pancakes

We recently had German pancakes at the home of some friends on a crisp fall afternoon. I fell in love with them all over again in all their buttery goodness. Sarah also quite enjoyed them and has been asking for them frequently ever since. This family has a tradition of eating German pancakes every Sunday, and I'm thinking of doing a similar tradition. They're easy, terrible for you, and quite tasty-three of my favorite things in a recipe.

German Pancakes

6 eggs
1 c. milk
1 c. flour
1 tsp. vanilla
1/2 c. sugar
1/2 tsp. salt
1/2 stick butter

Melt butter in a baking dish at 400 degrees. (This recipe is for a 9x13 pan or can be made extra thick in an 8x8 pan. We usually do half the recipe and bake it either in an 8x8 pan or a pie plate.) Beat the eggs until well blended. Add the milk, flour, vanilla, sugar, and salt and blend well. Pour into the pan with melted butter, return to the oven, and cook for 10-15 minutes.

We've been eating it most recently with an apple compote of sorts for which I followed a recipe once and then lost it and have been winging it ever since. Saute two diced apples in about 1 Tbsp. butter. Add some brown sugar (maybe 1/4 a cup or more if you like) and stir until well mixed. Add 1/2 cup apple juice and simmer until the apples are tender and the juice has mostly evaporated leaving it more saucy. You could also add some cinnamon or nutmeg if you wanted. Top with Cool Whip.

Other Possible Toppings
strawberries, raspberries, blueberries, any berries and whipped cream
syrup
jam
powdered sugar
peanut butter

Someone I know tops them with sour cream and brown sugar, I think.

The apple compote sounds delicious, and I've been dreaming of german pancakes for awhile now. Thanks for the little push I needed, I'm making it this weekend.

Sour cream & brown sugar? Sounds delightful. Do you think I could get these delivered on a tray to my bedroom tomorrow morning--preferably by a hunky man with only an apron on?

I'm more than happy to whip these up for visitors to New York. You will have to come to the table, though. There is no breakfast in bed here for anyone other than Baby Zach. My apologies to Eric and Laura as they only got the strawberries and whipped cream version and no gooey apple goodness.
