Banana spice waffles

These are a product of hey, I've got a bunch of browning bananas on my windowsill and I've got to do something with them. My family isn't much in to banana bread, so I decided to be all sneaky and put them into breakfast. The results were delicious, if I do say so myself. If I wanted to be all fancy, I could have doused them in caramel sauce with a dollop of whip cream and banana slices on the side. Naw. In too much of a hurry to get to church. They were just fine and dandy with a generous slab of butter and a drizzle of real maple syrup. I also think they'd be good with mini chocolate chips stirred into the batter. Use your imagination.

Mix together:
1 cup whole wheat flour
1 1/4 cups all purpose flour
2 T. sugar
2 1/2 T. baking powder
1/2 t. each cinnamon and cloves
dash salt

In a separate bowl, mash one banana very finely. Then stir in:
1/3 cup oil
2 eggs
2 T. molasses
1 2/3 cup milk

Fold into the dry ingredients, then cook per your waffle iron's directions. In our large four-square iron, this made 4 large waffles (a total of 16 squares).
